Fried Feta Eggs
One of my favorite savory breakfast options or quick lunches when working from home. The crispy feta adds a delicious crunch + bonus: more protein than the eggs alone!
Ingredients:
2 eggs (local / free-range, omega-3 preferred)
1/4 cup crumbled feta
1 tbsp chili oil
2 slices bread (I used sourdough, use whatever you like!)
fresh parsley
fresh cracked black pepper
Directions:
Heat a non-stick skillet over medium-high heat. Add feta and allow to sizzle for 10 seconds. Drizzle with chili oil and crack the eggs right over the feta (it’s okay if some spills over the feta).
Cover and allow eggs to cook - you want cooked whites and runny yolks. While eggs cook, toast your bread.
Top each toast with an egg, making sure to scrape up any crispy feta from the pan. Add fresh parsley and black pepper. Cheers!
