Not-So Deviled Eggs

Jammy eggs with giardiniera and smoked paprika aioli

Makes: 16
Time: 20 minutes

Ingredients:

  • 8 cage-free omega-3 eggs

  • 2 tbsp olive-oil mayonnaise

  • 1/2 tsp smoked paprika

  • 3 tbsp giardiniera (or pickled veggies), minced

  • 1 tsp parsley, minced

  • Sea salt & fresh black pepper

Directions:

  1. Boil the "jammy" eggs: Bring a medium pot of water to a boil and carefully drop eggs in with a slotted spoon. Boil for 8 minutes then immediately place eggs in an ice bath for 5 minutes (large bowl with ice water). Peel and cut in half. Sprinkle with a little salt and freshly ground black pepper. Set aside.

  2. Stir together the mayonnaise and paprika. Drop a small dollop on each egg half then top with minced giardiniera and chopped parsley. Serve cold. Enjoy!
